David Hook 2016 Mosto
The semillon grapes for this wine were hand picked in sound ripe condition.The resulting juice was concentrated to 18 B before fermentation. The juice was fermented cold and the fermentation was stopped leaving the wine with 10% alcohol and 80 g/l residual sugar. The wine was bottled early to retain the natural carbon dioxidefrom fermentation.
The wine is pale yellow in colourwith lifted fresh citrus fruit aromas. The palate is intensely fruity but is balanced by a crisp acid finish and a slight effervescence.
This wine is ideal for early consumption and does not require cellaring.
This wine can be served as an aperitif or at the end of the meal with cheese, dessert or fresh fruit.
