David Hook 2019 Pinot Noir
This Pinot Noir was grown in red loam soils over limestone on a steep north facing slope of Mount Canobolas in the Orange region of NSW. At an elevation of 1000m, this cool climate site has produced a wine of elegance, concentration and length.
Whole and crushed fruit were layered into traditional open vats for fermentation. The grapes were warm fermented and hand plunged gently extracting colour, flavour and tannins. After fermentation the wine was stored in French barrels for 12 months and then lightly fined and filtered before bottling.
The perfect wine with smoked duck, dumplings or smoked salmon. Cherry red in colour with a spicy aroma and tarry overtones. The palate is packed with fruit flavour with an earthy background, light tannins and soft acids finish the wine.
