(Dozen) The 2023 vintage is another step in the savoury, textural direction. Pinot Grigio and Albarino were harvested together and fermented on their skins to provide spice and structure. The Ceres Hill Merlot was pressed off its skins straight away and fermented as clean juice, encouraging bright, clean fruit expression without the addition of colour or tannin.

2023 was a dream vintage and this wine showcases a cross-section of both white and red varieties. Stone fruit and brambly spice on the nose; textured palate, with amaro like flavours, finishing nice and dry.
