Mercer 2021 Preservative Free Rosé
Made by leading Hunter winemaker Aaron Mercer, who was previously Senior Winemaker at Tamburlaine Wines. Aaron has launched a fantastic range of organic and preservative free wines under his own label, Mercer Wines.
Born and bred in the Hunter, Aaron studied environmental sustainability, biological farming and ecological management and completed a postgraduate degree in Oenology at the University of Adelaide. Aaron has been making organic wines since returning to Australia after a stint in the US where he worked with vineyards from Monterey to Santa Barbara on the Californian Central Coast.
This rosé is made from Shiraz and is made without the addition of sulphur, producing the purest expression of the grape variety. Delicate aromas of strawberry cream with a delicous and flavourful palate.
A little about Preservative Free (PF) wine...
The reason for making preservative free wine is because of some people's sensitivity to even low levels of sulfites. Winemakers use sulfites (usually in the form of sulphur dioxide) to preserve the wine and prevent oxidation. In Australia, strict regulations limit the levels allowed in wine and with premium wines these levels are generally very low. You will find sulfites in much higher concentrations in many other products including dried fruit, jams, processed meats and many packaged foods.
A wine labelled 'preservative free' means the winemaker has not added any additional sulfites during the winemaking process (small amounts of sulphur dioxide are released naturally during fermentation so PF wines still contain sulphites but only in trace amounts). The shelf life of a PF wine is naturally shorter and Aaron recommends enjoying this wine from now until about mid 2022. When you taste how juicy this wine is you won't find that a problem!
