David Hook 2019 Westcourt Lane Cabernet Sauvignon
The Westcourt Lane vineyard is located in the heart of Mudgee’s golden circle. The brownish sandy loam topsoils over neutral clay subsoils are friable and both surface and subsoils are well drained. These old unirrigated vines are low yielding producing only 1 to 2 tonnes per acre.
The grapes were fermented in traditional concrete open top fermenters for 7 days, then pressed off into a mix of new and older French hogsheads. The wine was stored in barrel for 18 months before a light filtration then bottling.
Lifted blueberry and boysenberry fruit, cassis aromas and vanilla oak make this wine appealing. A full bodied Cabernet with fine tannins from both fruit and oak and a sweet flow of ripe fruit through to the finish.
Cellaring: This wine is ideal for consumption now and will cellar well for 2 to 4 years.
Food Accompaniment: The perfect wine with grilled meats
